Fresh Whole Silver Icefish Whitebait
Fresh Whole Silver Icefish Whitebait
Small whole fish, slender and tapering, almost entirely translucent white with a soft sheen along the flank and a single small dark eye at the head. They are shown three ways: a row of them pan-cooked to a light gold on a cream plate over a bed of shredded greens and pale strips in a little oil; a fan of raw fish laid out on a wooden board beside a sink; and two plates of the raw fish on a steel bench, one cream and one steel.
They are soft and delicate, with almost no bone to pick out, and they cook in under a minute. Dust them in flour and fry them crisp, cook them into a plain omelette, or drop them into a light soup at the end.
