Fresh Whole Sea Star Delicacy
Fresh Whole Sea Star Delicacy
Whole sea stars, five-armed and bright orange, their upper surface covered in a close field of small raised knobs that runs out to the tips. They are shown three ways: three of them lying on a speckled stone board beside a steel sink, water beaded around them; a group on a white plate on a dark wood table, two split open down their length to show a ridged pale-green centre flecked with small round green pieces, the rest left whole; and three on a steel tray with sliced spring onion and red chilli and a little oil pooled around them, one opened to the same green centre.
The arms are firm and slightly chewy and the opened centre is soft and faintly sweet. Steam them briefly, simmer them into a broth, or split them open and grill the arms.
